Classy and Scarce
The distinguishable honeycombed Gucchi has a spongy head, large pits and ridges on its cap’s surface, a pale yellow color, and a savory flavor. Gucchi dominates the kingdom of spongy mushrooms for several reasons – its distinctive flavor, exceptional nutritional value, scarcity, and exoticism. Found in the lush woods of the great Himalayan regions in India especially Kashmir and since then Gucchi has captured the interest of gourmets across the globe.
The Uncultivable
This prized member of the family Morchellaceae of the Ascomycota is an elusive gem of Mother Nature. Depending on the trees around it, the condition of the soil, and other important factors, these waffle morels grow in a diverse range of habitats like deciduous forests, coniferous forests, subalpine forests, and alpine forests. Other than forests, Gucchi also grows in plain areas with abundant sand and moisture such as lands near water bodies. They require an altitude of about 1500 to 3500 meters above sea level and a temperature between 15 and 17 degrees Celsius to grow.
The black morels grow for a relatively short period – from the end of February to the start of April. It is believed that the morels grow when lightning hits the earth. Isn’t that simply amazing?
However, one disappointing fact about Gucchi is that it cannot be cultivated commercially. Yes! That true. This wild yet divine morel grows on its own in the Manali, J&K, and other parts of Himachal Pradesh and Uttarakhand when snowfall ends. Growing abundantly in the temperate Northern Hemisphere, including North America, China, Turkey, India, and Pakistan, the ecology of this species of morels is still largely not understood well.
